Why do billiard professional players wear bowties

Because normal neck ties would droop onto the table

anytime you in a repectable sport they make you dress nice. bowtie is worn so that it isnt hanging on the table..some pool games are illegal for anything to touch the balls. so therefore a bowtie is used and out of the way
